Fabrication of Uniform Casein/CaCO3 Vaterite Microspheres and Investigation of Its Formation Mechanism

Uniform Casein/CaCO3 microspheres (mainly in vaterite, composed of aggregates of nanosized crystals) were fabricated with well tuned properties and the formation mechanism based on the templating effect of casein micelles was proposed. With the increase of casein concentration, the microsphere size decreased from 3.1 to 1.1 μm, while the loading content of casein increased from 15.3 wt % to 24.0 wt %.
