Epitaxial Growth of Fat Crystals on Emulsifier Crystals with Different Fatty Acid Moieties

In situ observations of crystal growth of fat on emulsifier crystal substrates demonstrated their epitaxial relationship. The crystal growth of fat depended on matching of the chain lengths of the fatty acid moieties of the fat and emulsifier: when the chain lengths of the fatty acid moieties of the fat and emulsifier were similar, epitaxial growth occurred.
