Thermal Effects on Lipids Crystallization Kinetics under High Pressure

At high pressure levels and low initial temperature, crystallization induced during adiabatic compression resulted in high density of small homogeneous crystals. In comparison, crystallization under isobaric cooling was structurally heterogeneous when maximum temperature under pressure was higher than the corresponding crystallization temperature. However, at low initial temperature nucleation can occur at atmospheric pressure prior to pressurization that diminished these effects.
